Ingredients

  • 3/4 cup mashed potatoes, cooled
  • 1 pound coconut
  • 1 pound powdered sugar
  • 1 teaspoon almond extract
  • chocolate chips

Instructions

  1. Mix together mashed potatoes, coconut, powdered sugar, and almond extract until well combined.
  2. If the mixture is sticky, refrigerate for 30 minutes to firm up.
  3. Shape the mixture into bite-sized balls.
  4. Chill the formed balls overnight.
  5. Melt chocolate chips with a small amount of paraffin wax until smooth.
  6. Dip the chilled balls into the melted chocolate to coat completely.
  7. Place dipped candies on a tray and refrigerate until the chocolate is set.
