Ingredients

  • 2 cups bean soup mix
  • 2 quarts water
  • 1 teaspoon salt
  • 1 meaty bone
  • 1 or 2 cans tomatoes
  • 1 cup chopped onion
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon pepper

Instructions

  1. Rinse the beans and soak in cold water overnight. Drain.
  2. Add 2 quarts of water, salt, and the meaty bone to the beans.
  3. Simmer for 3 hours and then remove the bone, leaving the meat in the pot.
  4. Add chopped onion, chopped green pepper, minced garlic, canned tomatoes, chili powder, lemon juice, and pepper.
  5. Cover and simmer for 45 minutes.
