Ingredients

  • 1 c. boiling water
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 1 c. Bran Buds or 100% Bran
  • 1/2 c. shortening
  • 2 c. buttermilk
  • 2 1/2 tsp. baking soda
  • 2 c. All-Bran

Instructions

  1. Pour boiling water over Bran Buds or 100% Bran and let it sit.
  2. Cream together sugar and shortening.
  3. Add eggs to the creamed mixture and beat well.
  4. Stir in the buttermilk and the bran mixture.
  5. Sift flour with baking soda and salt, then add to the wet ingredients.
  6. Add All-Bran and mix until just moistened.
  7. Pour batter into greased muffin tins.
  8. Bake at 400°F (200°C) for 12 to 20 minutes until golden brown.
