Tips & Substitutions

For added depth of flavor, consider sautéing the mushrooms before adding them to the soup. If you don't have barley, quinoa or rice can be a great substitute. Fresh herbs like parsley or dill can also enhance the taste. To save time, use rotisserie chicken instead of raw chicken pieces, which will also make it a quicker weeknight meal.

Serving Suggestions

Serve this hearty Mushroom Chicken Barley Soup with crusty bread or a side salad for a complete meal. It pairs beautifully with Cabbage Chicken Salad for a refreshing contrast. For an extra touch, sprinkle fresh herbs on top before serving, or add a squeeze of lemon juice for brightness.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it on the stove over low heat, adding a splash of water or chicken broth if needed to loosen the soup. This soup also freezes well; just ensure it’s cooled completely before transferring to freezer-safe containers.

Frequently Asked Questions

Can I use frozen chicken for this soup?

Yes, you can use frozen chicken pieces; just extend the cooking time to ensure they are fully cooked and tender. Keep in mind that you may need to adjust the seasoning, as frozen chicken can sometimes dilute flavors.

What can I substitute for barley if I don't have any?

If you don't have barley, you can substitute it with quinoa or even small pasta shapes. Both alternatives will provide a similar texture and help make the soup hearty and filling, while still allowing for a delicious flavor profile.

Is it possible to make this soup in a slow cooker?

Absolutely! To make it in a slow cooker, combine all ingredients except for the mushrooms and barley, and cook on low for 6-8 hours. Add the mushrooms and barley in the last hour of cooking to ensure they don't become too soft.
