Ingredients

  • 24 thin slices white bread
  • 3 Tbsp. minced shallots
  • 1/2 lb. fresh mushrooms, finely chopped
  • 1 c. heavy cream
  • 1 Tbsp. minced parsley
  • 1/2 tsp. salt
  • 2 Tbsp. softened butter
  • 1/4 c. butter
  • 2 Tbsp. flour
  • 1 1/2 Tbsp. minced chives
  • 1/2 tsp. lemon juice

Instructions

  1. Preheat the oven to 400°F.
  2. Cut a 3-inch round from each slice of white bread.
  3. Brush the inside of two miniature muffin tins generously with butter.
  4. Gently fit the bread rounds into each mold to form cups.
  5. Bake for 10 minutes or until lightly browned.
  6. Allow the bread cups to cool before filling.
