Ingredients

  • 26 slices thinly sliced bread
  • 4 Tbsp. butter
  • 2 Tbsp. flour
  • 1/8 tsp. cayenne pepper
  • 2 to 3 Tbsp. parsley
  • 1/2 tsp. salt
  • 3 Tbsp. shallots
  • 1/2 lb. mushrooms
  • 1 cup half and half

Instructions

  1. Cut bread into 3-inch circles and butter one side of each slice.
  2. Place the bread circles buttered side down in small muffin pans.
  3. Bake at 400°F for 10 minutes until golden.
  4. Cook diced mushrooms for 3 minutes, then drain.
  5. Sprinkle flour over the cooked mushrooms and stir completely.
  6. Add half and half to the mushroom mixture and stir until it boils and thickens.
  7. Remove from heat and stir in cayenne pepper, parsley, salt, and shallots.
  8. Fill the bread cups with the mushroom mixture and sprinkle with Parmesan cheese.
  9. Bake at 350°F for 10 minutes before serving.
  10. Can be frozen for later use.
