Ingredients

  • 1 lb. fresh whole mushrooms
  • 3 packages frozen chopped spinach
  • 1/2 tsp. salt
  • 1/4 cup chopped onion
  • 2 Tbsp. melted butter
  • 1 cup grated Cheddar cheese
  • 1/4 tsp. garlic powder
  • dash of pepper

Instructions

  1. Sauté whole mushrooms in melted butter until browned; set aside.
  2. Cook frozen chopped spinach according to package instructions and drain well.
  3. Combine cooked spinach with melted butter, chopped onion, salt, garlic powder, and pepper.
  4. Place the spinach mixture in a 10-inch quiche or pie pan.
  5. Sprinkle 1/2 cup grated Cheddar cheese over the spinach.
  6. Arrange the sautéed mushrooms over the spinach layer.
  7. Cover with the remaining Cheddar cheese.
  8. Bake at 350°F (175°C) for 20 minutes until bubbly and golden.
