Ingredients

  • 2 cups chopped mushrooms
  • 1 cup saltine crackers
  • 1 cup chopped scallions
  • 1 1/2 cups Swiss cheese
  • 3 eggs
  • 1 cup cottage cheese
  • dash of basil

Instructions

  1. Saute 2 cups chopped mushrooms and 1 cup crushed saltine crackers until lightly browned.
  2. Remove from pan and press mixture into a 9-inch pie plate to form the crust.
  3. Saute 1 cup chopped scallions and spread evenly over the crust.
  4. Grate 1 1/2 cups Swiss cheese and sprinkle on top of scallions.
  5. In a bowl, blend together 3 eggs, 1 cup cottage cheese, a dash of basil, thyme, cayenne pepper, and paprika.
  6. Pour the egg mixture into the pie plate over the cheese and scallions.
  7. Sprinkle paprika on top of the filling.
  8. Bake at 325°F (163°C) for 25 to 35 minutes until set.
  9. Remove from oven and let rest for 10 to 15 minutes before serving.
