- Saute 2 cups chopped mushrooms and 1 cup crushed saltine crackers until lightly browned.
- Remove from pan and press mixture into a 9-inch pie plate to form the crust.
- Saute 1 cup chopped scallions and spread evenly over the crust.
- Grate 1 1/2 cups Swiss cheese and sprinkle on top of scallions.
- In a bowl, blend together 3 eggs, 1 cup cottage cheese, a dash of basil, thyme, cayenne pepper, and paprika.
- Pour the egg mixture into the pie plate over the cheese and scallions.
- Sprinkle paprika on top of the filling.
- Bake at 325°F (163°C) for 25 to 35 minutes until set.
- Remove from oven and let rest for 10 to 15 minutes before serving.
