Ingredients

  • 2 cups flour
  • 2 cups crushed pineapple with juice
  • 2 teaspoons baking soda
  • 2 eggs
  • 1 1/2 cups sugar
  • 8 ounces cream cheese
  • 1 1/2 cups confectioners sugar
  • 1/2 cup margarine
  • 2 teaspoons vanilla

Instructions

  1. In a mixing bowl, stir together flour, crushed pineapple with juice, baking soda, eggs, and sugar using a wooden spoon.
  2. Pour the batter into a greased 9 x 13-inch baking pan.
  3. Bake at 350°F for 35 minutes or until a toothpick inserted into the center comes out clean.
  4. While the cake is baking, beat cream cheese, confectioners sugar, margarine, and vanilla until smooth and creamy.
  5. Once the cake has cooled, spread the cream cheese mixture evenly over the top.
