Ingredients

  • 4 large chicken breast halves
  • 2 Tbsp. flour
  • 1/4 cup butter or margarine
  • 3/4 cup herbed mustard
  • 1 medium onion, chopped fine
  • 1/2 cup mushrooms, chopped fine
  • 1 cup heavy cream
  • 2 Tbsp. chopped parsley
  • 1 tsp. lemon juice

Instructions

  1. Dust chicken breast halves with flour.
  2. In a medium skillet, sauté chicken in butter until browned.
  3. Transfer the chicken to a shallow baking dish.
  4. Spread each piece liberally with herbed mustard.
  5. Sauté chopped onion and mushrooms until tender.
  6. Add chopped parsley, salt, and pepper to taste.
  7. Blend in heavy cream and stir just until heated.
  8. Pour the cream mixture over the chicken.
  9. Bake at 350°F (175°C) for 30 to 35 minutes.
  10. Stir in lemon juice just before serving.
