Ingredients

  • 4 chicken breasts
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 egg
  • 2 Tbsp. oil
  • 2 Tbsp. mustard
  • 1/4 c. Parmesan cheese
  • 1/4 c. bread crumbs

Instructions

  1. Dry chicken breasts with paper towels.
  2. Season chicken with salt and pepper.
  3. In a bowl, beat the egg and mustard together.
  4. In a separate bowl, mix Parmesan cheese and bread crumbs.
  5. Dip each chicken breast into the egg mixture, then roll in the cheese and bread crumb mixture.
  6. Heat oil in a skillet and sauté the coated chicken for 15 to 20 minutes.
  7. Add sliced green pepper during the last 5 minutes of cooking.
