Ingredients

  • 1 box Stove Top stuffing
  • 1/4 stick margarine
  • 1 egg
  • 1 large eggplant
  • 1 large onion
  • 1 can cream of mushroom soup
  • 2 cups Cheddar cheese, shredded

Instructions

  1. Cook the diced eggplant in salted water until tender; drain well.
  2. In a mixing bowl, combine the stuffing, melted margarine, slightly beaten egg, cooked eggplant, and sautéed chopped onion.
  3. Mix the cream of mushroom soup with milk of choice and half of the shredded Cheddar cheese.
  4. Pour the eggplant mixture into a casserole dish.
  5. Spread the remaining cheese evenly on top.
  6. Bake at 325°F (160°C) for 1 hour until bubbly and golden.
