- Prepare a 9 x 13-inch pan with vegetable spray.
- Cook margarine, sugar, chocolate, and vanilla in the top of a double boiler over simmering water until blended.
- Add beaten egg; stir slowly.
- Cook for 5 minutes, stirring constantly.
- Add vanilla, graham cracker crumbs, and chopped pecans. Press mixture into the prepared pan.
- Chill for 15 minutes.
- Cream margarine and Neufchatel cheese until fluffy.
- Add vanilla to the cream mixture.
- Gradually add powdered sugar and beat until smooth.
- Add red food coloring if desired and pour over the cracker mixture.
- Refrigerate for 30 minutes.
- Melt butter and chocolate chips in the top of a double boiler.
- Spread the melted chocolate mixture over the chilled cream filling.
- Refrigerate until the top layer is firm.
- Cut into 36 squares.
