Ingredients

  • 1/2 cup margarine
  • 1/4 cup sugar
  • 1 ounce unsweetened chocolate
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups fine graham cracker crumbs
  • 1/2 cup chopped pecans
  • 1/4 cup margarine
  • 8 ounces Neufchatel cheese
  • 1 teaspoon vanilla
  • 1 box powdered sugar
  • 3 or 4 drops red food coloring (optional)

Instructions

  1. Prepare a 9 x 13-inch pan with vegetable spray.
  2. Cook margarine, sugar, chocolate, and vanilla in the top of a double boiler over simmering water until blended.
  3. Add beaten egg; stir slowly.
  4. Cook for 5 minutes, stirring constantly.
  5. Add vanilla, graham cracker crumbs, and chopped pecans. Press mixture into the prepared pan.
  6. Chill for 15 minutes.
  7. Cream margarine and Neufchatel cheese until fluffy.
  8. Add vanilla to the cream mixture.
  9. Gradually add powdered sugar and beat until smooth.
  10. Add red food coloring if desired and pour over the cracker mixture.
  11. Refrigerate for 30 minutes.
  12. Melt butter and chocolate chips in the top of a double boiler.
  13. Spread the melted chocolate mixture over the chilled cream filling.
  14. Refrigerate until the top layer is firm.
  15. Cut into 36 squares.
