Instructions

  1. Mix equal quantities of currants, strawberries, raspberries, rhubarb, gooseberries, and sour cherries. Frozen fruit may be used.
  2. Bring the mixture to a boil over medium heat.
  3. Simmer until all the fruit is tender, about 10-15 minutes.
  4. Add sugar to taste and stir to combine.
  5. Thicken the mixture with cornstarch mixed with water and cook for another 2-3 minutes until thickened.
  6. Serve the compote cool, topped with sweet cream.
