Nanci's Salad is a light, fruity, and creamy dish featuring strawberries or raspberries, pineapple, cranberry sauce, and whipped cream, making it perfect for festive gatherings or as a dessert.

Ingredients

  • 1 pkg. strawberry or raspberry jello
  • 1 pt. heavy whipping cream
  • 1 pkg. cream cheese
  • 1 c. pineapple chunks
  • 1/2 c. walnuts, chopped (optional)
  • 1 c. whole cranberry sauce

Instructions

  1. Use a cold beater and bowl to whip the heavy whipping cream to stiff peaks. Place in refrigerator.
  2. Make jello with 1 cup boiling water only and cool to room temperature.
  3. Drain pineapple chunks, reserving the juice, and add water to make 1 cup of pineapple juice.
  4. Beat cream cheese until smooth. Slowly add cooled jello and pineapple juice while mixing.
  5. Fold in pineapple chunks and cranberry sauce.
  6. Gently fold in whipped cream and chopped walnuts (if using).
  7. Grease a jello mold and pour the mixture into it.
  8. Optional: make a smaller mold if desired.
  9. Refrigerate for at least 24 hours before serving for best results.
