- Use a cold beater and bowl to whip the heavy whipping cream to stiff peaks. Place in refrigerator.
- Make jello with 1 cup boiling water only and cool to room temperature.
- Drain pineapple chunks, reserving the juice, and add water to make 1 cup of pineapple juice.
- Beat cream cheese until smooth. Slowly add cooled jello and pineapple juice while mixing.
- Fold in pineapple chunks and cranberry sauce.
- Gently fold in whipped cream and chopped walnuts (if using).
- Grease a jello mold and pour the mixture into it.
- Optional: make a smaller mold if desired.
- Refrigerate for at least 24 hours before serving for best results.
