Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tablespoon vanilla
  • 2 cups raw grated unpeeled zucchini
  • 2 1/2 cups flour
  • 1/4 teaspoon baking powder
  • 2 teaspoons soda
  • 1/2 teaspoon salt
  • 3 teaspoons cinnamon

Instructions

  1. In a large bowl, beat the eggs until light and fluffy, then add sugar, oil, and vanilla, mixing well.
  2. Stir in the grated zucchini.
  3. Add the remaining ingredients: flour, baking powder, soda, salt, and cinnamon, then blend until combined.
  4. Pour the batter into two greased and floured loaf pans.
  5. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
