Ingredients

  • 1 1/2 c. sugar
  • 3 eggs
  • 1 oz. lemon extract
  • 2 c. sifted flour

Instructions

  2. Toss the mixture with 1 cup of sifted all-purpose flour, making sure all ingredients are well coated.
  3. Set aside the floured fruit and nut mixture.
  4. Cream together butter and sugar until light and fluffy.
  5. Add eggs, one at a time, beating well after each addition.
  6. Stir in lemon extract.
  7. Sift together 2 cups of flour and baking powder.
  8. Gradually add the sifted flour mixture to the creamed mixture in thirds, mixing well after each addition.
  9. Add the floured fruit and nut mixture to the batter, mixing until evenly coated.
  10. Transfer the batter to a well-greased 10-inch tube pan.
  11. Cover the pan tightly with aluminum foil.
