Ingredients

  • 5 large sweet potatoes
  • 3 Tbsp. margarine or butter, divided
  • 16 oz. can sliced pineapple
  • 1/4 cup molasses
  • 1 cup dark brown sugar
  • 1/3 cup granulated sugar
  • 1/3 cup orange juice
  • 1/2 tsp. vanilla extract
  • 1 1/2 to 2 tsp. cornstarch
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel the sweet potatoes and slice them into rounds 1 to 1 1/2 inches thick.
  3. Melt 2 tablespoons of margarine or butter over low heat.
  4. In a small bowl, mix together the cinnamon, nutmeg, and ginger.
  5. Drain the sliced pineapple and set aside.
  6. In a saucepan, combine the molasses, dark brown sugar, granulated sugar, orange juice, and vanilla extract. Heat until the sugars are dissolved and the mixture is smooth.
  7. Add the cornstarch to the sauce and stir until the mixture thickens slightly.
  8. Arrange the sweet potato slices in a baking dish and brush with melted margarine.
  9. Pour the pineapple slices evenly over the sweet potatoes.
  10. Pour the sauce over the pineapple and sweet potatoes.
  11. Sprinkle the spice mixture evenly over the top.
  12. Bake in the preheated oven for about 45 minutes or until the sweet potatoes are tender and the top is caramelized.
