- Preheat oven to 350°F (175°C).
- Peel the sweet potatoes and slice them into rounds 1 to 1 1/2 inches thick.
- Melt 2 tablespoons of margarine or butter over low heat.
- In a small bowl, mix together the cinnamon, nutmeg, and ginger.
- Drain the sliced pineapple and set aside.
- In a saucepan, combine the molasses, dark brown sugar, granulated sugar, orange juice, and vanilla extract. Heat until the sugars are dissolved and the mixture is smooth.
- Add the cornstarch to the sauce and stir until the mixture thickens slightly.
- Arrange the sweet potato slices in a baking dish and brush with melted margarine.
- Pour the pineapple slices evenly over the sweet potatoes.
- Pour the sauce over the pineapple and sweet potatoes.
- Sprinkle the spice mixture evenly over the top.
- Bake in the preheated oven for about 45 minutes or until the sweet potatoes are tender and the top is caramelized.
