Tips & Substitutions

For a richer flavor, consider using dark chocolate with at least 70% cacao. If you don’t have bittersweet chocolate, semi-sweet can be used as a substitute, though it will be sweeter. Ensure the eggs are at room temperature for better incorporation into the batter. To prevent the cake from sticking, grease the pan generously and consider using parchment paper.

Serving Suggestions

Serve this decadent cake warm with a dollop of sweetened whipped cream and a drizzle of raspberry sauce for a stunning presentation. It pairs beautifully with a scoop of vanilla ice cream or can be enjoyed alongside a cup of coffee or espresso. For a twist, consider serving with a slice of Grandma June'S Banana Bread(Now Known As 'Crossover Banana Bread').

Storage & Reheating

Store any leftover cake in an airtight container in the refrigerator for up to 3 days. To reheat, slice a piece and microwave for 10-15 seconds or until just warmed through. Alternatively, you can enjoy it cold, topped with fresh whipped cream and raspberry sauce for an indulgent treat.

Frequently Asked Questions

Can I make this cake in advance?

Yes, you can make this cake a day ahead. Allow it to cool completely, then wrap it tightly in plastic wrap and store it in the refrigerator. Before serving, let it come to room temperature or warm it slightly in the microwave.

What can I use if I don’t have a double boiler?

If you don't have a double boiler, you can create a makeshift one by placing a heatproof bowl over a pot of simmering water. Just ensure the bottom of the bowl doesn't touch the water, allowing for gentle heating while you beat the eggs and sugar.

How do I know when the cake is done baking?

The cake is done when the edges start to pull away from the sides of the pan and the center is set but still slightly soft. A toothpick inserted should come out with a few moist crumbs, indicating a rich and fudgy texture.
