Natalya's Chicken features tender chicken breasts baked with fresh vegetables and herbs, offering a flavorful, wholesome meal perfect for family dinners and health-conscious eaters.

Ingredients

  • 1 Tbsp. oregano
  • 1 Tbsp. rubbed sage
  • 1 Tbsp. basil
  • 4 chicken breasts, skin removed
  • 1 fresh lemon
  • 3 fresh carrots, sliced
  • 3 stalks fresh celery, chopped
  • 8 mushrooms, sliced
  • 2 medium tomatoes, chopped
  • 3/4 cup butter, sliced and crumbled
  • 1/3 cup water

Instructions

  1. Combine oregano, sage, and basil thoroughly.
  2. Wash and pat dry the chicken breasts.
  3. Pat chicken breasts with the combined spices on both sides.
  4. Place in a glass casserole dish 2 to 3 inches deep.
  5. Squeeze half of the fresh lemon juice over the chicken.
  6. Scatter the carrots, celery, mushrooms, tomatoes, and lemon slices over the chicken.
  7. Pour one-third cup of water over the vegetables and chicken.
  8. Distribute slices of butter over the top of the vegetables.
  9. Cover tightly with a casserole lid or aluminum foil.
  10. Bake at 300°F until vegetables are tender, about 1 hour.
  11. Serve the chicken with vegetables over buttered rice with spinach salad.
