Ingredients

  • 2 cups sifted flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup chopped nuts
  • 1 cup chopped dates, dusted lightly with flour
  • 2/3 cup buttermilk
  • 2 tablespoons grated orange rind
  • Juice from 1 large orange or 2 small oranges

Instructions

  1. Grease a medium-sized tube or loaf pan and line the bottom with wax paper.
  2. Grease again and lightly dust with flour, then shake out excess flour.
  3. In a mixing bowl, combine sugar, shortening, eggs, and grated orange rind; mix well.
  4. Add buttermilk, sifted flour, baking soda, and salt to the mixture, and blend thoroughly.
  5. Fold in chopped nuts and lightly floured chopped dates.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake in a preheated oven at 350°F (175°C) for approximately 40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.
