Ingredients

  • 1 quart blueberries
  • 1 cup sugar
  • 4 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 cup water
  • 1 tablespoon butter

Instructions

  1. In a blender, blend 1 cup of blueberries with water until smooth.
  2. In a saucepan, mix sugar and cornstarch, then add salt and the blueberry/water mixture.
  3. Heat the mixture over medium heat, stirring constantly until thickened.
  4. Remove from heat and stir in butter and the remaining blueberries.
  5. Pour the filling into an unbaked 9-inch pie shell.
  6. Cover with top crust and seal edges.
  7. Bake at 350°F (175°C) until the crust is golden brown.
  8. Allow the pie to cool before serving. It will not run when cut.
