Ingredients

  • 1/2 lb. sweet butter
  • 4 cups flour
  • 1 cup sugar
  • 3 egg yolks
  • 1 teaspoon baking powder
  • juice of 1 orange

Instructions

  1. Cream the butter and sugar together until smooth.
  2. Add the egg yolks to the creamed mixture and blend well.
  3. Combine the flour and baking powder, then gradually add to the mixture.
  4. Add the orange juice and orange rind to the dough and mix thoroughly.
  5. Roll out the dough on a floured surface to about 1/4 inch thickness.
  6. Cut the dough into 2-inch round cookies using a fancy cookie cutter.
  7. For half of the cookies, cut a small hole in the center with a thimble or cookie cutter.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake in a preheated oven at 350°F (180°C) for 15 minutes or until lightly golden.
  10. Allow cookies to cool completely on wire racks.
  11. Spread currant jelly on the flat cookies and top with the cut-out cookies to assemble the sandwiches.
