Ingredients

  • 6 eggs, separated
  • 2/3 cup cold water
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon cream of tartar

Instructions

  1. Separate the eggs into yolks and whites.
  2. Beat the egg yolks for 5 minutes until thickened.
  3. Add cold water and sugar to the yolks and beat for an additional 4 minutes.
  4. Sift together the flour and salt, then fold into the yolk mixture.
  5. Beat the egg whites until frothy, add cream of tartar, and continue beating until they hold peaks.
  6. Gently fold the beaten egg whites into the yolk and flour mixture.
  7. Pour the batter into a tube pan and bake at 350°F (175°C) for about 1 hour.
