Ingredients

  • 1 quart low-fat milk
  • 6 eggs
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoons vanilla
  • 1 cup heavy cream, whipped

Instructions

  1. Heat the milk in a saucepan over low heat, ensuring it does not boil.
  2. Beat the eggs into the hot milk, bringing it to a boil.
  3. Add salt and gradually beat in the sugar.
  4. Beat 1 cup of the hot milk into the egg mixture.
  5. Pour the egg mixture back into the remaining hot milk in the saucepan.
  6. Cook over low heat, stirring constantly, until the mixture thickens and reaches 160°F on a candy thermometer.
  7. Stir in 1/2 teaspoon of nutmeg and the vanilla.
  8. Place the saucepan in a large bowl of ice and cool for 12 minutes.
  9. Cover and refrigerate for 24 hours before serving.
