Ingredients

  • 2 lb. ground meat
  • 2 Tbsp. oil
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 4 eggs
  • 1/2 lb. mushrooms, sliced
  • 1 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 1 pkg. spinach (fresh or frozen)

Instructions

  1. Brown meat well in oil in large frying pan over high heat. Add onions, garlic and mushrooms; reduce heat and continue cooking until onions are soft.
  2. Stir in seasoning and spinach.
  3. Cook for about 5 minutes longer.
  4. Add eggs and stir mixture over low heat just until eggs begin to set.
  5. Makes 4 to 6 servings.
  6. Serve with sourdough bread or biscuits.
