Ingredients

  • 1 lb ricotta cheese
  • 2 pkg. (8 oz.) cream cheese
  • 1 1/2 cups sugar
  • 4 eggs
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon vanilla
  • 3 tablespoons cornstarch
  • 2 tablespoons flour
  • 1/4 cup melted butter
  • 1 pint sour cream
  • crushed graham crackers

Instructions

  1. Blend ricotta cheese and cream cheese until smooth, then blend in sugar.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla and lemon juice.
  4. Add cornstarch, flour, and melted butter; mix until combined.
  5. Fold in sour cream and blend well.
  6. Butter a 10-inch spring-form pan.
  7. Crush graham crackers and spread in the bottom and edges of the prepared pan to form the crust.
  8. Pour the cheesecake mixture into the prepared pan.
  9. Place a pan with water in the oven to create a water bath, then place the cheesecake pan in the oven.
  10. Bake at 325°F (160°C) for 1 hour.
  11. Turn off the oven and leave the door closed for 2 to 3 hours.
  12. Refrigerate overnight before serving.
