Ingredients

  • 1 c. cornmeal
  • 1 c. all-purpose flour
  • 1/4 c. sugar
  • 3/4 tsp. salt
  • 4 tsp. baking powder
  • 2 eggs
  • 1 c. buttermilk

Instructions

  1. Preheat oven to 425°F.
  2. In an iron skillet, add 2 tablespoons oil, heat to medium to medium-high.
  3. Mix dry ingredients: cornmeal, all-purpose flour, sugar, salt, and baking powder.
  4. Add eggs and buttermilk to the dry ingredients and mix until ingredients are moistened and well combined.
  5. Pour the batter into the hot skillet.
  6. Bake until browned and cooked through in the hot oven.
