Ingredients

  • 1 pkg. active dry yeast
  • 1/4 cup warm water (105° to 111°F)
  • 1/2 cup warm apple juice (105° to 111°F)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 (15 oz.) can pumpkin
  • 1 cup rye flour
  • 3 1/2 to 3 3/4 cups all-purpose flour

Instructions

  1. Dissolve yeast in warm water in a large bowl.
  2. Stir in remaining ingredients, except flours.
  3. Stir in rye flour.
  4. Gradually add all-purpose flour, 1 cup at a time, until the dough is easy to handle.
  5. Turn dough onto a lightly floured surface and gently roll in flour to coat.
  6. Knead about 10 minutes or until smooth and elastic.
  7. Spray a large bowl with nonstick cooking spray.
  8. Place dough in the bowl and turn greased side up.
  9. Cover and let rise in a warm place for about 1 1/4 hours or until doubled.
