Normandy Chicken

Ingredients
- 3 Tbsp. butter ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 4 tart green apples, peeled, cored, sliced and sprinkled with lemon juice
- 1/2 tsp. cinnamon ⓘ
- 2 tsp. sugar ⓘ
- 1/4 tsp. ground ginger ⓘ
- 1/4 tsp. thyme ⓘ
- 1/4 tsp. ground cloves ⓘ
- 8 whole chicken breasts, boneless and skinless ⓘ
- 1 c. white wine ⓘ
- 3/4 c. apple juice ⓘ
- 1 Tbsp. cornstarch
- 1 c. heavy cream ⓘ
- salt and freshly ground pepper to taste ⓘ
- 2 Tbsp. apple brandy or cognac ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter and vegetable oil in a skillet over medium heat.
- Saute peeled, cored, and sliced green apples with lemon juice, cinnamon, sugar, ground ginger, thyme, and ground cloves for about 5 minutes or until apples are limp, stirring occasionally.
- Place the cooked apples in the bottom of a baking dish and set aside.
