Ingredients

  • 1 Tbsp. olive oil
  • 1 medium onion
  • 1 carrot
  • 2 cloves garlic
  • 3 oz. diced ham
  • 1/2 tsp. basil
  • 1/2 cup canned or fresh tomatoes
  • 3 cups chicken broth
  • 1 cup kidney beans
  • salt and pepper
  • 1/4 cup pasta

Instructions

  1. Saute onion and carrot in olive oil for 5 minutes.
  2. Add garlic, ham, and basil; saute for 2 more minutes.
  3. Add tomatoes, chicken broth, kidney beans, salt, and pepper; cook for 20 minutes.
  4. Add pasta and cook for an additional 6 minutes.
  5. Serve with Parmesan cheese.
