Norwegian Te-Brod is a rich, buttery cake infused with warm spices like cardamom and lemon extract, perfect for tea time or special occasions with a sweet cinnamon topping.

Ingredients

  • 1 1/4 cups butter or margarine
  • 1 1/2 cups sugar
  • 4 eggs
  • 4 cups flour
  • 3 teaspoons baking powder
  • pinch of salt
  • 1 teaspoon lemon extract
  • 1 teaspoon ground cardamom

Instructions

  1. Melt butter; add sugar, beaten eggs, lemon extract, and sifted flour with baking powder, salt, and ground cardamom; mix well.
  2. Grease and flour a 9 x 13-inch pan.
  3. Pour the batter into the prepared pan and spread evenly.
  4. Sprinkle a mixture of sugar and cinnamon over the top of the batter.
  5. Bake in a 300°F (150°C) oven for 30 minutes.
  6. Remove from the oven and let cool.
  7. Split the cake lengthwise, then into slices.
  8. Place slices on a cookie sheet and bake in a 350°F (175°C) oven until browned.
  9. Turn over and brown the other side.
