- Cream the butter with 1/3 cup of flour until smooth.
- Chill the butter mixture.
- Roll out the chilled butter between two sheets of wax paper into an oblong 12 x 6 inches.
- Chill the rolled-out butter until ready to use.
- Combine the remaining ingredients: all-purpose flour, active dry yeast, warm water, milk, sugar, salt, beaten egg, and egg yolk to prepare the dough.
- Knead the dough until smooth and elastic.
- Roll out the dough into a large rectangle and place the prepared butter on top.
- Fold the dough over the butter, seal the edges, and roll out again.
- Repeat the folding and rolling process multiple times to create flaky layers.
- Cut the dough into triangles, roll into croissant shapes, and place on a baking sheet.
- Let the shaped croissants rise until doubled in size.
- Brush the croissants with beaten egg before baking.
- Bake in a preheated oven at 375°F (190°C) for about 15 minutes or until golden brown.
