Ingredients

  • 6 eggs, separated
  • 1/2 lb. butter or margarine
  • 2 c. sugar
  • 1 lb. self-rising flour
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 2 lb. seeded raisins, chopped fine

Instructions

  1. Flour the chopped raisins to prevent them from sticking together.
  2. Cream the sugar and butter until light and fluffy.
  3. Add the self-rising flour, buttermilk, egg yolks, chopped raisins, and vanilla to the creamed mixture.
  4. Gently fold in the beaten egg whites until combined.
  5. Pour the batter into prepared cake pans to make 3 or 4 layers.
  6. Bake at 350°F (175°C) until the cake is done and a toothpick inserted in the center comes out clean.
