Ingredients

  • 1 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1 cup seeded raisins
  • 1 cup chopped nuts
  • 1/4 cup shortening
  • 1/4 cup firmly packed brown sugar
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 1/2 cup molasses

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a shallow 9-inch square pan.
  3. Sift together flour, baking soda, salt, and ground ginger.
  4. Stir in raisins and chopped nuts.
  5. Cream shortening and brown sugar until well blended.
  6. Beat in eggs one at a time.
  7. Add vanilla extract and molasses; mix well.
  8. Gradually add the flour and nut mixture, blending until smooth.
  9. Pour the batter into the prepared pan.
  10. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
  11. Cut into squares while still warm.
  12. Let cool in the pan before removing and serving.
