Ingredients

  • 1 cup pecans, chopped
  • 8 oz cream cheese
  • 6 eggs, separated
  • 2 tsp vanilla
  • 3 sticks unsalted butter
  • 3 cups sugar
  • 3 cups sifted cake flour
  • 1/2 tsp almond extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Flour a Bundt pan and sprinkle chopped pecans in the bottom of the pan.
  3. Cream together the butter, cream cheese, and sugar until light and fluffy.
  4. Add egg yolks one at a time, mixing well after each addition.
  5. Stir in vanilla and almond extracts just until combined.
  6. Pour the batter into the prepared pan over the pecans.
  7. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before removing from the pan and serving.
