Ingredients

  • 3/4 cup brown sugar
  • 1/3 cup margarine, melted
  • 1 teaspoon vanilla
  • 1 egg yolk
  • 2 cups Bisquick baking mix
  • 1/2 cup corn syrup
  • 2 tablespoons margarine
  • 6 oz. bag butterscotch chips

Instructions

  1. Mix the brown sugar, 1/3 cup margarine, vanilla, and egg yolk with a fork in an ungreased 9 x 13-inch pan.
  2. Stir in Bisquick baking mix until the mixture is crumbly.
  3. Press the mixture evenly into the pan to form a crust.
  4. Bake in a 350°F oven for 15 to 20 minutes, or until light brown.
  5. Remove from oven and let cool.
  6. In a saucepan, melt together the corn syrup, 2 tablespoons margarine, and butterscotch chips; cool slightly.
  7. Spread the butterscotch mixture evenly over the cooled crust.
  8. Sprinkle with nuts and press lightly into the topping.
  9. Refrigerate until the topping is firm.
  10. Optional: Freeze for longer storage.
