Ingredients

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1 cup plus 2 tablespoons sugar
  • 1/2 cup vegetable oil
  • 2 cups diced peeled apples
  • 1 1/2 cups chopped walnuts
  • 3/4 cup flaked coconut

Instructions

  1. In a large bowl, combine the flour, baking soda, salt, and nutmeg.
  2. In another bowl, beat eggs, sugar, and vegetable oil.
  3. Stir in the diced peeled apples, chopped walnuts, and flaked coconut.
  4. Add the wet ingredients to the dry ingredients and stir until moistened.
  5. Fill 18 greased muffin cups three-quarters full.
  6. Bake at 350°F (175°C) for 25 to 30 minutes.
  7. Cool in the pan for 10 minutes before removing to wire racks.
