Ingredients

  • water
  • 2 medium apples (such as McIntosh or Granny Smith)
  • 1 Tbsp. butter
  • 2 tsp. brown sugar
  • 2 Tbsp. creamy or chunky peanut butter
  • 1 Tbsp. raisins
  • dash of ground cinnamon

Instructions

  1. Add enough water to a 9 x 5-inch microwave-safe loaf pan to fill about 1/4-inch.
  2. Core the apples.
  3. Peel a 1-inch strip of skin off the top of each apple.
  4. Arrange the apples in the pan, evenly spaced.
  5. Place 1 teaspoon of butter and 1/2 teaspoon of brown sugar into each apple.
  6. Cover the pan with vented plastic wrap.
  7. Microwave on High for 4 to 6 minutes, rotating the dish once, until apples are tender.
  8. Remove from the microwave and let stand, covered, for 2 minutes.
