Ingredients

  • 15 oz. pineapple chunks, drained
  • 1 cup whipping cream
  • 2 Tbsp. sugar
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1/2 cup walnuts, chopped and toasted
  • 1 cup prunes, cooked and chopped
  • 2/3 cup toasted coconut

Instructions

  1. Whip the whipping cream, gradually adding sugar, lemon juice, and vanilla until soft peaks form.
  2. Fold in the cooked and chopped prunes, drained pineapple chunks, toasted coconut, and chopped toasted walnuts.
  3. Chill the dessert for several hours before serving.
