Nutty Cauliflower

A crunchy, nutty cauliflower dish featuring toasted pecans and tender peppers, perfect as a flavorful vegetable side for casual or special meals.

Ingredients

  • 1 lb. cauliflower, broken into flowerets
  • 1/2 medium green or sweet red pepper, cut into bite-size strips
  • 1 clove garlic, minced
  • 1 Tbsp. margarine or butter
  • 1/4 cup toasted pecans

Instructions

  1. Cook cauliflower, covered, in a small amount of boiling water for 8 to 10 minutes or until crisp-tender.
  2. Drain the cauliflower.
  3. Transfer the cauliflower to a serving bowl.
  4. Meanwhile, in a medium skillet, cook green pepper and garlic in margarine until tender.
  5. Pour the cooked pepper and garlic mixture over the cauliflower and toss.
  6. Stir in toasted pecans.
