Ingredients

  • 2/3 cup walnuts, coarsely chopped
  • 4 large fresh carrots
  • 2 tablespoons butter, melted
  • 1/8 teaspoon grated lemon peel
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey

Instructions

  1. Put the walnuts on a cookie sheet and toast in a 350°F oven until lightly toasted.
  2. Cut the carrots into sticks and steam until tender.
  3. Melt the butter in a small saucepan.
  4. Add grated lemon peel, lemon juice, honey, and heat thoroughly.
  5. Pour the sauce over the steamed carrots.
  6. Sprinkle the toasted walnuts over the carrots.
  7. Pepper and toss lightly to combine.
