Ingredients

  • 4 medium tomatoes, halved
  • peanut or vegetable oil
  • 1/2 tsp. salt
  • 2/3 cup shredded Cheddar cheese
  • 1/2 cup dried bread crumbs
  • 1/2 cup chopped peanuts
  • 1/4 cup butter or margarine, melted
  • 3/4 tsp. dried leaf basil, crushed
  • 1/8 tsp. cayenne pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brush tomato skins with oil.
  3. Place the tomato halves, cut side up, in a 13 x 9-inch baking dish.
  4. Sprinkle the tomatoes with salt and set aside.
  5. Combine shredded Cheddar cheese, dried bread crumbs, chopped peanuts, melted butter, dried leaf basil, and cayenne pepper in a medium bowl.
  6. Spoon the mixture onto the tomatoes.
  7. Bake for 15 minutes until golden and bubbly.
