Ingredients

  • 8 to 10 cups homemade cornbread, crumbled
  • 1 1/2 to 2 cups cooked rice
  • 4 stalks celery, chopped
  • 1 bunch green onions, chopped
  • 1 large white onion, chopped
  • Broth and meat of 1 good sized hen
  • 5 beaten eggs
  • 1/2 stick butter
  • 1 can cream of chicken soup

Instructions

  1. Cook chicken until done, then cool and remove the meat from the bones, leaving the broth in the pot.
  2. Crumble the cornbread into a large bowl and mix with cooked rice.
  3. Sauté chopped celery, white onion, and green onions with butter in a skillet for about 4 to 5 minutes.
  4. Pour chicken broth into the bowl with cornbread and rice.
  5. Add cream of chicken soup and beaten eggs to the mixture.
  6. Stir in the sautéed celery and onions.
  7. Season with salt and pepper to taste.
  8. Pour the mixture into a baking dish and bake at 350°F for about an hour or until done.
