- Cook chicken until done, then cool and remove the meat from the bones, leaving the broth in the pot.
- Crumble the cornbread into a large bowl and mix with cooked rice.
- Sauté chopped celery, white onion, and green onions with butter in a skillet for about 4 to 5 minutes.
- Pour chicken broth into the bowl with cornbread and rice.
- Add cream of chicken soup and beaten eggs to the mixture.
- Stir in the sautéed celery and onions.
- Season with salt and pepper to taste.
- Pour the mixture into a baking dish and bake at 350°F for about an hour or until done.
