Ingredients

  • 1 cup oats
  • 1 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1 cup sugar
  • 1/2 cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup peeled, diced cooking apples
  • 1/3 cup chopped walnuts

Instructions

  1. Combine oats, flour, baking soda, salt, and ground allspice in a bowl and set aside.
  2. In a separate bowl, stir together sugar, oil, egg, and vanilla until well blended.
  3. Add the sugar mixture to the dry ingredients and mix until combined.
  4. Fold in peeled, diced cooking apples and chopped walnuts if using.
  5. If the batter is much too thick, add a very small amount of water to loosen it.
  6. Spread the batter evenly in a greased and floured 8-inch square baking dish.
  7. Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted in the center comes out clean.
  8. Serve plain, with ice cream, or with cream cheese frosting.
