Ingredients

  • 1/4 lb butter or margarine
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup oatmeal
  • 1 whole egg
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 teaspoon soda
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups boiling water

Instructions

  1. Cream well the butter, white sugar, and brown sugar.
  2. Pour 1 1/4 cups boiling water over 1 cup oatmeal and let sit to soften.
  3. Add the whole egg, 2 egg whites, and vanilla to the creamed mixture and mix well.
  4. Sift together the flour, soda, cinnamon, and salt.
  5. Combine the creamed mixture and oatmeal mixture, then gradually add the dry ingredients and mix until well blended.
  6. Pour the batter into a greased baking dish.
  7. Bake for 30 minutes at 350°F (175°C).
  8. When removed from the oven, cover with your preferred topping.
