Oatmeal Crisp Cookie

Ingredients

  • 1 1/2 c. flour
  • pinch of salt
  • 1 c. sugar
  • 2 eggs, beaten
  • 1/2 c. chopped nuts
  • 3 c. oatmeal
  • 1 grated orange rind
  • 1 tsp. baking soda
  • 1 c. margarine
  • 1 c. brown sugar
  • 1 tsp. orange juice
  • 1 tsp. vanilla
  • 1 c. flaked coconut

Instructions

  1. Sift dry ingredients; put aside.
  2. Cream margarine; add sugars, eggs, juice and vanilla and mix well.
  3. Add oatmeal, coconut, rind and nuts; mix and blend well.
  4. Then add the dry ingredients. Blend well and form 4 logs.
  5. Roll in wax paper and freeze for a couple of hours.
  6. Remove from freezer one at a time and slice thin on greased cookie sheet.
  7. Bake at 400° for 10 minutes.
  8. It makes a lot of cookies.
