Ingredients

  • 1 cup flour (half white, half wheat)
  • 1/2 teaspoon salt
  • 1/4 cup wheat germ
  • 3 teaspoons baking powder
  • 1 cup quick oatmeal
  • 1/4 cup honey
  • 1 cup milk
  • 1 slightly beaten egg
  • 3 tablespoons salad oil

Instructions

  1. Preheat oven and prepare muffin tins as needed.
  2. In a large bowl, combine flour, salt, wheat germ, baking powder, and quick oatmeal.
  3. In a separate bowl, mix honey, milk, beaten egg, and salad oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into muffin tins, filling each about two-thirds full.
  6. Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool slightly before serving.
