Ingredients

  • 1 cup uncooked rice
  • 2 1/4 cups water
  • 4 pork chops
  • 2 medium green peppers
  • 1 large onion
  • 2 stalks celery
  • 1/4 cup soy sauce
  • 3 eggs
  • 1 tablespoon olive oil

Instructions

  1. In a large saucepan, bring 1 cup of rice and 2 1/4 cups of water to a boil.
  2. Reduce heat to low and cook until all water is absorbed, approximately 20 minutes, or follow package directions.
  3. In a large skillet, heat 1 to 2 tablespoons of olive oil and fry the pork chops.
  4. Cut the pork chops into bite-sized pieces, discarding bones and fat.
  5. Add sliced green peppers, onion, and celery to the skillet and cook until vegetables are tender.
  6. Add the cooked rice to the skillet and mix thoroughly with the other ingredients.
  7. Crack the eggs into the skillet and cook until eggs are thoroughly cooked, mixing as they cook.
  8. Add soy sauce and stir thoroughly to combine.
  9. Serve hot.
