- In a large saucepan, bring 1 cup of rice and 2 1/4 cups of water to a boil.
- Reduce heat to low and cook until all water is absorbed, approximately 20 minutes, or follow package directions.
- In a large skillet, heat 1 to 2 tablespoons of olive oil and fry the pork chops.
- Cut the pork chops into bite-sized pieces, discarding bones and fat.
- Add sliced green peppers, onion, and celery to the skillet and cook until vegetables are tender.
- Add the cooked rice to the skillet and mix thoroughly with the other ingredients.
- Crack the eggs into the skillet and cook until eggs are thoroughly cooked, mixing as they cook.
- Add soy sauce and stir thoroughly to combine.
- Serve hot.
