Ingredients

  • 2 1/2 cups sifted all-purpose flour
  • 1 3/4 cups sugar
  • 1/4 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup soft shortening
  • 1 can (15 oz.) applesauce (1 3/4 cups)
  • 3 eggs
  • 1 cup seedless raisins, chopped

Instructions

  1. Preheat oven to 350°F.
  2. Grease well and flour a 13 x 9 x 2-inch baking pan.
  3. Sift flour, sugar, baking powder, baking soda, salt, and spices into a large bowl of an electric mixer.
  4. Add shortening and applesauce; beat for 1 minute at low speed, just to combine.
  5. At medium speed, beat for 2 minutes, constantly cleaning the side of the bowl with a rubber scraper and guiding batter into the beaters.
  6. Add eggs; beat for 2 minutes.
  7. Combine raisins and chopped walnuts; fold into batter with a rubber scraper.
  8. Turn batter into the prepared pan.
  9. Bake for 45 minutes, or until a cake tester inserted in the center comes out clean.
  10. Let the cake cool completely in the pan on a wire rack.
  11. Frost as desired.
  12. To serve, cut into rectangles.
